Philosophy & Site
Peter Graham has been making wine since 1999, when he began working in vineyards and cellars in Beechworth. During the early years, he studied oenology at Charles Sturt University while working as an assistant winemaker nearby until 2012. With more than 25 years of experience working on this granite rich vineyard site, Peter brings an intimate perspective to the celebrated Beechworth region. Domenica sits 460m atop the granite ridge south west of Beechworth. The 4 hectare vineyard is planted to Chardonnay, Nebbiolo, Shiraz and Gamay which reflect their origin and offer cellar worthy wines with a gripping mineral texture.
Winemaking
Winemaking on site is traditional and driven by taste more than numbers. Pressings, solids and lees all play their part completing the picture. The wines are matured in a range of carefully selected French oak barrels, puncheons and foudres and capture the diversity of aspects and clonal selections in the vineyard. Wild ferments, minimal intervention and patience are key to transparency found in the wines and Peter thoughtfully and respectfully draws out the intensity of the granitic high altitude site making wines that harmonise power, elegance and purity.
